- 8 oz mushrooms
- 1 medium shallot
- 2 Tbsp butter, divided (1 Tbsp + 1 Tbsp)
- ½ tsp dried thyme

- ¼ cup white wine
- 1 tsp oil
- 16 oz beef fillet

Instructions
- Finely chop or mince the mushrooms and the shallot.
- Heat a pan on the stove and add 1 tablespoon of butter.
- Once melted, add the minced mushrooms, minced shallot, dried thyme, salt, and pepper to the pan. Stir and cook to combine.
- Add the remaining 1 tablespoon of butter and the white wine to the mushroom mixture. Cook and stir until the liquid reduces, then remove from the heat.
- In a separate pan, heat 1 teaspoon of oil. Add the beef fillet and sear on all sides until browned, then remove from the pan.
- Roll out the puff pastry on a flat surface using a rolling pin.

- Fold the puff pastry up and around the beef to encase it completely.
