A flavorful pantry seasoning blend and an easy method for air frying coated chicken breasts.

Ingredients

  • 2 chicken breasts (about 6.5 ounces each)

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • 1 teaspoon light brown sugar

  • 1 tablespoon neutral oil

Directions

  • Place the chicken breasts in a plastic sandwich bag or between two pieces of baking paper.
  • Bash the thickest part a few times with a rolling pin to even out the thickness without flattening the chicken entirely.
  • Mix together the salt, pepper, paprika, garlic powder, oregano, and brown sugar in a medium bowl.
  • Add the chicken breasts to the bowl with the seasoning and toss together to fully coat the chicken.
  • Drizzle over the oil and toss to fully coat.
  • Place the chicken in the air fryer basket in a single layer without a liner, leaving space between the pieces for good airflow.
  • Air fry at 400°F (200°C) for 11 to 12 minutes, turning once halfway through cooking.
  • Remove the chicken when it is no longer pink in the middle; because carryover cooking can vary, verify that the thickest part reaches 165°F (75°C) before serving.

Notes

  • If cooking more than two chicken breasts, work in batches to maintain a single layer with space around each piece.
If using larger chicken breasts around 7 to 8 ounces each, you may need to add 1 to 2 minutes to the cooking time.

Why This Technique Works

Evening out the chicken breasts with a rolling pin helps the meat cook uniformly in the air fryer. Tossing the seasoned chicken with a little neutral oil ensures the spices stick well and helps the exterior develop a better color and texture during the high-heat cooking process.

Air Fryer Tips

For the best results with this seasoning, place the chicken directly on the air fryer tray without using a paper or silicone liner. This allows the hot air to circulate completely around the meat, ensuring the seasoning cooks evenly on all sides.
